Quinoa and black bean salad

Quinoa and black bean salad recipe is a vibrant, nutritious dish that combines the wholesome goodness of quinoa with the heartiness of black beans. Quinoa, a gluten-free seed, is celebrated for its high protein content and rich supply of essential amino acids. Black beans, a staple in many cuisines, are loaded with fiber, protein, and antioxidants. Together, these ingredients form the base of a salad that’s not only healthy but also incredibly flavourful.


  • 1 cup quinoa
  • 400g can of black beans, drained and rinsed
  • 1 red capsicum, diced
  • 1 small can of corn kernels
  • 1 small red onion, finely chopped
  • 2 tomatoes, diced
  • 1/2 cup fresh coriander, chopped
  • Juice of 2 limes
  • 2 tablespoons olive oil
  • Salt and pepper to taste


  1. Rinse quinoa under cold water. In a pot, bring 2 cups of water to a boil. Add quinoa, reduce heat to low, cover, and cook for 15 minutes. Remove from heat and let stand for 5 minutes, then fluff with a fork.
  2. In a large bowl, combine cooked quinoa, black beans, capsicum, onion, corn, tomatoes, and coriander.
  3. In a small bowl, whisk together lime juice, olive oil, salt, and pepper. Pour over the salad and toss to combine.
  4. Serve chilled or at room temperature.
