Quinoa and black bean salad recipe is a vibrant, nutritious dish that combines the wholesome goodness of quinoa with the heartiness of black beans. Quinoa, a gluten-free seed, is celebrated for its high protein content and rich supply of essential amino acids. Ingredients:
- 1 cup quinoa
- 400g can of black beans, drained and rinsed
- 1 red capsicum, diced
- 1 small can of corn kernels
- 1 small red onion, finely chopped
- 2 tomatoes, diced
- 1/2 cup fresh coriander, chopped
- Juice of 2 limes
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions:
- Rinse quinoa under cold water. In a pot, bring 2 cups of water to a boil. Add quinoa, reduce heat to low, cover, and cook for 15 minutes. Remove from heat and let stand for 5 minutes, then fluff with a fork.
- In a large bowl, combine cooked quinoa, black beans, capsicum, onion, corn, tomatoes, and coriander.
- In a small bowl, whisk together lime juice, olive oil, salt, and pepper. Pour over the salad and toss to combine.
- Serve chilled or at room temperature.
