Left over roast chicken

Vegetable or chicken stock

Salt & pepper to taste

Cajun spice

Olive oil or garlic infused olive oil
Method
Break up the chicken and chop all of the vegetables into small pieces. Heat the fry pan and add oil and all the vegetables. Add some cajun spice, salt & pepper stir and add a little bit of water to simmer the vegetables for a few minutes. Add the chicken and pour in boiling water until just covering the ingredients. Add a teaspoon of stock powder and cook for a further 10 minutes or until vegetables are just cooked through.
