As part of my nighttime routine – dessert is ALWAYS involved, but I never want to spike my blood sugar before bed so this is my go to healthy swap when I want a treat after dinner. It’s sugar free and tastes amazing ( you’d never know).
Ingredients
Pinch salt
Pinch cinnamon
1 tbsp vanilla protein
1 tbsp almond meal
1 tbsp oats
1 tbsp coconut oil
1 tbsp peanut butter (or any nut butter)
Handful dark choc chips (darker the better)
Method:
- Set oven to 180 degrees
- Add all ingredients into a bowl
- Mix well to form one big cookie
- Place in a lined baking tray
- Bake for 15-20 mins or until lightly golden
- Allow to cool and enjoy!
