Recipe: Sugar-free PB vegan choc chip cookie

As part of my nighttime routine – dessert is ALWAYS involved, but I never want to spike my blood sugar before bed so this is my go to healthy swap when I want a treat after dinner. It’s sugar free and tastes amazing ( you’d never know).


Pinch salt
Pinch cinnamon
1 tbsp vanilla protein
1 tbsp almond meal
1 tbsp oats
1 tbsp coconut oil
1 tbsp peanut butter (or any nut butter)
Handful dark choc chips (darker the better)


  1. Set oven to 180 degrees
  2. Add all ingredients into a bowl
  3. Mix well to form one big cookie
  4. Place in a lined baking tray
  5. Bake for 15-20 mins or until lightly golden
  6. Allow to cool and enjoy!
