Recipe: Chilly Tuna Salad

- Cherry tomatoes
- Spinach leaves
- Four beans (type based on preference)
- Red capsicum
- Boiled/air-fried egg
- Chilly tuna
- Goat cheese
- Olive oil
- Balsamic vinegar
- Dijon mustard
Prepare the egg. You can either air-fry it (if you have an air fryer) for 7-9 minutes, or boil it. Once done, keep it aside to cool down.
While the egg is getting ready, prep the salad ingredients. Rinse the spinach leaves, cherry tomatoes, red capsicum, and cucumber. Chop the avocado, red capsicum, cucumber, and carrot into desired size. If needed, shave and blanch the corn and four beans.
In a large bowl, combine the salad ingredients. Add in the chilly tuna and crumbled goat cheese, and toss lightly.
Prepare the dressing. In a jar, add the olive oil, balsamic vinegar, salt, pepper, Dijon mustard, garlic, and honey. Secure the lid and shake vigorously until all the ingredients are well mixed together.
Pour the dressing over the salad.
Slice the prepared egg and place on top of the salad.
