Ingredients You’ll Need:
- 4 medium potatoes, cubed
- 1 can (15 oz) chickpeas, drained and rinsed
- 1 cup cherry tomatoes, halved
- 2 tbsp olive oil
- 1 tbsp lemon juice
- 1 tsp garlic powder
- 1 tsp dried oregano
- 1 tsp paprika
- 2 tbsp garlic dip (or a thick, creamy garlic sauce)
- Sea salt, to taste
- Fresh coriander (optional, for garnish)
Preheat the oven: Preheat your oven to 200°C Line a large baking tray with parchment paper or lightly grease it with olive oil.
Prepare your vegetables: Wash and peel (optional) the potatoes, then cut them into cubes. Place them on the prepared baking tray. Add cherry tomatoes and drained chickpeas.
Season: Drizzle 2 tablespoons of olive oil over the vegetables. Then add 1 tbsp of fresh lemon juice, 1 teaspoon of garlic powder, 1 teaspoon of paprika, and 1 teaspoon of dried oregano. Toss everything together to ensure the vegetables are well-coated with the seasonings.
Roast: Place the tray in the oven and roast for about 35 minutes, stirring halfway through. The potatoes should be tender and golden, and the chickpeas should be slightly crispy.
Finishing touches: Once everything is roasted to your liking, remove the tray from the oven. Spread garlic dip over your serving plate, then add the roasted vegetables on top. Finish with a pinch of sea salt and garnish with fresh coriander.
