Ingredients You’ll Need:
- 1 ripe mango, peeled and diced
- 1 red capsicum (bell pepper), diced
- 1/2 cucumber, diced
- 1/2 red onion, finely sliced
- 1/2 cup black beans, drained and rinsed
- 1/2 cup sweet corn (fresh, frozen, or canned)
- 1/2 avocado, diced
For the Dressing:
- 2 tbsp lemon juice
- 2 tbsp olive oil
- Salt and pepper, to taste
Prepare Your Ingredients: Peel and dice the mango, red capsicum and cucumber. Finely slice the red onion. Drain and rinse the black beans. If using canned or frozen corn, heat or drain as needed.
