Makes 12 mini muffins
Ingredients:
– 1.5 very ripe large bananas, peeled
– 1/2 cup self-raising flour
– 1/3 cup wholemeal self-raising flour
– 1 tsp cinnamon
– 1/2 cup Greek Style Natural Yoghurt
– 1 egg, lightly whisked
– 90g dark chocolate (preferably 70% cocoa), coarsely and thinly chopped
Instructions:
1. Preheat the air fryer to 180°C for 3 minutes. Lightly grease a 6-8 hole silicone mini muffin mold, ensuring it fits into your air fryer.
2. In a bowl, mash the bananas. Add the yogurt and egg, then whisk to combine.
3. In a separate bowl, combine the flours, cinnamon, and chocolate. Pour in the banana mixture and mix until just combined.
4. Spoon 1 tablespoon of the banana mixture into each hole in the muffin mold.
5. Air fry for 8 minutes or until just cooked through. Allow the muffins to cool for 2-3 minutes before removing them from the mold.
6. Repeat with the remaining mixture.
