Anna has shared her favourite Coconut Water Fruit Ice-Blocks and Watermelon, Strawberry & Kiwifruit Ice-Blocks which are a breeze to make and bursting with your favourite fruits and hydrating coconut water. Two super easy and fun ways to make popsicles just in time for spring.
Coconut Water Fruit Popsicles
Prep Time: 10 minutes
Freeze Time: Overnight
Ingredients:
- Mixed fruit: Your favourites (Eg: strawberries, blueberries, kiwifruit and raspberries)
- Coconut water: Enough to fill your ice-block moulds
Instructions:
1. Prepare Fruit: Wash, peel, and chop the mixed fruit into small, bite-sized pieces.
2. Fill Moulds: Divide the fruit evenly between ice-block moulds.
3. Add Coconut Water: Pour coconut water into each mould, filling them up to the brim.
4. Insert Sticks: Insert the ice-block sticks into the moulds.
5. Freeze: Place the moulds in the freezer overnight or until completely firm.
6. Serve: Remove the popsicles from the moulds and enjoy your refreshing treat!
Tips:
- Mix and match different fruit combinations for a variety of flavours and colours.
- For added flavour, try using flavoured coconut water.
Watermelon, Strawberry & Kiwi Popsicles
Prep Time: 15 minutes
Freeze Time: 6 hours/overnight
Ingredients:
- 1/4-1/2 watermelon (skin removed)
- 3 kiwifruit
- 1/2 punnet strawberries (hulled)
Instructions:
1. Prepare Watermelon Mixture: Dice watermelon into 1cm pieces and then blend the watermelon pieces and strawberries in a food processor until smooth.
2. Strain and Fill Moulds: Sieve the watermelon-strawberry mix to remove seeds. (Optional). Pour strained mixture into popsicle moulds, filling each mould 3/4 full. Freeze for about 2 hours until almost set.
3. Prepare Kiwi Purée: While waiting, blend kiwis in the food processor until smooth. Put in fridge until ready to use.
4. Add Kiwi Layer: Take moulds out of the freezer and add kiwi purée to fill the remaining 1/4 space in each mould. Place popsicle sticks into the centre of each mould.
5. Final Freeze: Freeze the popsicles for another 6 hours or until entirely frozen.
