Roasted Feta and Tomato Pasta with Prawns
SERVES: 3 – 4
PREP TIME: 10 mins
TOTAL TIME: 45 mins
Ingredients:
- 2 punnets of cherry or grape tomatoes
- 5 peeled cloves of garlic
- 125 ml extra-virgin olive oil
- Salt
- Pepper
- Approximately 200g block of large feta
- 300 g pasta
- Italian herbs
- 250g uncooked prawns
- Fresh basil, for garnish
Directions:
Step 1: Preheat the oven to 200°C. In a medium baking dish, combine the tomatoes, garlic, and all but 1 tablespoon of oil. Season with salt, pepper, and Italian herbs, then toss to combine.
Step 2: Place the feta in the center of the tomato mixture and drizzle with the remaining oil. Bake for 35 minutes, until the tomatoes are bursting and the feta is golden on top.
Step 3: Meanwhile, in a large pot of boiling salted water, cook the pasta according to package directions.
Step 4: Take out the feta and tomatoes and use a fork to mix them in.
Step 5: Add the prawns to the tomatoes and feta for the last 10 minutes of baking.
Step 6: Take out the baking dish with the tomatoes, feta, and prawns, add the cooked pasta, then stir until combined. Top with basil and serve.
