Simple, satisfying, and full of flavour – Anna’s one-pan caramelised onion pasta is the perfect easy meal. With sweet onions, sun dried tomatoes and fresh herbs, is is a speedy dish that hits the spot every time! If your searching for an extra protein hit add in meatballs, a very delicious addition 🤤💥
Ingredients:
- 5 small yellow onions, sliced, or 3 large
- 1 head garlic, top trimmed
- 3/4 cup sun-dried tomatoes, chopped
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 tablespoon paprika
- 1 teaspoon dried parsley
- ½ cup coconut milk
- 3 cups farfalle pasta, cooked
- 1 handful fresh parsley, chopped
- 1 handful fresh basil, chopped
- Juice of 1 lemon
- Optional chilli flakes if you want some spice
- Optional cooked meatballs (added at the end)
Instructions:
- Preheat your oven to 200°C.
- In a casserole dish, combine the onions, sun-dried tomatoes, paprika, salt, pepper, and dried parsley (add chilli here if you want some spice).
- Mix well, placing the garlic head at the centre. Drizzle everything with olive oil or leftover sun-dried tomato oil. Cover with foil and bake for 1 hour, stirring midway. Onions should be caramelised when done.
- About 20 minutes before the dish is finished baking, cook the pasta according to the package instructions, keeping aside up to a cup of the pasta water.
- Remove the garlic from the oven, and once cool enough, squeeze out the cloves. Add the fresh parsley, basil, lemon juice, coconut milk, and cooked pasta, using the reserved pasta water as needed to achieve the desired consistency.
- Optional: Add cooked meatballs.
